You can certainly make flexible boards with the V-One. See this post for a demo of a double-sided flex circuit. A single-sided circuit would just skip the drilling and assembly steps.

If you plan on attaching components to your flexible board, please note:
- The flex ink is more delicate than the regular ink when soldering, so either reflow solder when the kapton is still adhered to the rigid backing, or carefully hand solder at 180C with our flux and solder wire.
- The flex ink will become brittle after soldering, so you need to encapsulate your components. I do this with a UV cure epoxy, and then just put it in a low-cost UV nail curing station to set the resin. You could also just use a plain 2-part epoxy.
